Lettuce Spinach Tomato Pine Nut Salad
1 head lettuce
2 tomatoes
1/2 cup spinach
Handful of sesame seeds
Handful of pine nuts
1 tbsp apple cider vinegar
Coconut/Olive oil
Sea salt
Method
Wash and shred lettuce. Place lettuce in a bowl. Wash and dice tomatoes, add to the bowl. Wash, drain and run spinach through the food processor. Place spinach, sesame seeds and pine nuts to the bowl. Add apple cider vinegar, oil of you choice and a dash or two of sea salt to the bowl. Toss together and enjoy!
