Red Bell Pepper Avocado and White Cabbage Salad

Red Bell Pepper Avocado and White Cabbage Salad


1 red bell pepper
1 avocado
½ white cabbage
2 cloves garlic
1/2 onion
1 tbsp apple cider vinegar
Coconut oil/Olive oil
Dash of sea salt (optional)

Method
De-seed and slice red bell pepper. Pit, peel and dice avocado and place into a bowl. Shred white cabbage and add to bowl. Peel and grate/mince garlic and onion and add to the bowl with the oil of your choice and one dash sea salt (optional).
Toss gently and enjoy!

1 small white cabbage or 1/2 large/medium white cabbage
2 tomatoes
1 tbsp apple cider vinegar
Coconut oil/olive oil
One dash sea salt (optional)

Method
Chop cabbage and place in bowl. Cut tomatoes into strips and add to bowl. Add oil of your choice, apple cider vinegar and one dash sea salt(optional). Toss and enjoy!

Avocado Red Bell Pepper Salad

1 avocado
1 red bell pepper
Coconut oil or olive oil
Sea salt

Method

Peel and dice or slice avocado. Remove seeds from pepper and slice into strips. Toss with oil of your choice and sea salt. Enjoy!


Tomato Avocado Celery Salad


Tomato Avocado Celery Salad

2 tomatoes
1/2 of an avocado
4 stalks celery(can include leaves)
2 cloves garlic
Sea salt
Coconut oil or Olive oil

Method
Dice avocados and tomatoes. Place in a bowl.  Chop celery stalks and leaves.  Add to bowl.  Grate garlic and add to bowl as well.  Toss with sea salt and oil of your choice.  Enjoy!



Broccoli Tomato Salad



Broccoli Tomato Salad

Broccoli
Tomato(diced)
Sea salt
Coconut oil/Olive oil
1 sprig celery

Method
Run broccoli through the food processor to break it up in to tiny pieces. Add diced tomatoes, oil of your choice and mix well. Decorate with the sprig of celery which of course should be consumed as part of the salad for added nutrition.



Tip: Running the broccoli through the food processor breaks it down into tiny pieces that are easier to deal with in my mouth. The oils added also soften it a bit more.
