Cucumber Green Herb Salad

1 cucumber
parsley
chives
celery
Coconut oil or Olive oil
Sea salt

Method
Wash and slice cucumber(peeling is optional).  Place in a bowl.  Chop parsley, chives and celery.  Add the oil of your choice or both.  Sprinkle a bit a sea salt.  Toss together and enjoy!

Raw Plantain & Cucumber Salad

Raw Plantain & Cucumber Salad

4 very ripe plantains

1 large cucumber(or 2 small ones)

1 clove garlic(grated finely)

1 tbsp coconut oil/olive oil

Sea salt

Method

Peel ripe plantains and slice thinly.  Cut off ends of cucumber and slice thinly as well.  Add garlic, sea salt and oil of your choice.  Toss together.  Enjoy!
