Raw Ripe Plantain, Lettuce & Green Bell Pepper Salad

Raw Ripe Plantain, Lettuce & Green Bell Pepper Salad


1 ripe plantain
1 head lettuce
1 green bell pepper
Coconut oil/Olive oil
Dash of sea salt (optional)

Method
Peel & cut plantains into strips.  Place in a bowl.  Wash and shred lettuce.  Add to bowl.  De-seed and slice green bell pepper and put into the bowl. Drizzle with the oil of your choice and one dash sea salt (optional).
Toss gently and enjoy!

Tip: Choose plantains with the skins partially black to get the sweetness of taste.

Lettuce Pumpkin Green Bell Pepper Salad

1 head lettuce
1 cup grated raw pumpkin
1 green bell pepper
1/2 onion
2 cloves garlic
Sea salt
Coconut/Olive oil

Method
Wash lettuce and shred into a bowl. Peel pumpkin(optional) and grate into the bowl. Remove core of green bell peppers, slice and add to the bowl. Peel and grate/chop onion and garlic and add to bowl. Add sea salt, oil of your choice and toss together. Enjoy!

Cabbage and Green Bell Pepper Salad


1/2 small cabbage
1 green bell pepper
1 tsp apple cider vinegar
Sea salt
Coconut oil/Olive oil

Method

Shred cabbage and place in a bowl.  De-seed pepper and slice into strips.  Add a dash of sea salt.  Drizzle the oil of your choice. Add apple cider vinegar.  Toss everything together.  Enjoy!

Lettuce Avocado and Green Bell Pepper Salad


1 head lettuce
1/2 large avocado(or 1 small)
2 cloves garlic
Coconut oil or Olive oil
Sea salt

Method
Wash and coarsely chop lettuce leaves.  Place in a bowl.  Peel and slice or dice avocados.  Peel and grate or finely chop garlic.  Add avocados and garlic to the bowl.  Toss with oil of your choice and a dash or two of sea salt.  Enjoy!
