Watercress Mixed Salad
1 bunch watercress
1/2 small cabbage
1 small piece pumpkin
1 large carrot
2 cloves garlic
1/4 onion
Sea salt
Coconut/Olive oil
Method
Wash watercress and very coarsely chop(most of the leaves should remain intact). Place in a bowl. Chop/shred cabbage. Add to the bowl. Grate pumpkin, carrot, garlic and onion into the bowl. Add a dash or two of sea salt. Drizzle the oil of your choice over the vegetables and toss everything together. Enjoy!
