Hi there, A plantain is ripe when the skin is yellow(not light yellow but a little darker). It is best to wait until a bit of the skin appears black(or dark brown). It may look like it is going bad then but it is at that point it will be softer and ripe enough to be consumed raw.
If the plantain is not ripe enough it will give what is known as a tongue-tying effect(almost like a scratchy feeling on your tongue). Also test it by pressing the skin. If it feels hard then definitely it's not ripe, it should be a bit soft when squeezed almost like when a banana is very ripe.
Could you please tell me how to tell if a plantain is ripe. I have never used them before, but I really would like to try this recipe.
